We all have busy schedules whether working two jobs, being a student, a parent or doing all of the above. Life gets hard. However, if you can find shortcuts to simplify your life, why not do it?
As you may know, eating out gets pricey. In the time you order and it gets to your door you can make it yourself. In 30 minutes you too will be able to create meals that are similar to take-out for half the cost and that are much healthier.
If you have children, have them join in on the fun in the kitchen. Have them break apart the florets or rinse the rice. Save your money from take-out for ice cream with the family. This meal is affordable, healthier, and easy to make. Chicken and broccoli with sesame seeds will be ready in 30 minutes!
Begin by sautéing the chicken until its almost golden. Since this is a 30 minute meal, in order for the chicken to cook faster its key that you cut it into small pieces. Need it ready in less than 30 minutes? Cut it in half to 1/2 an inch.
Rinse the broccoli.
Add the small bite pieces of the broccoli florets with 2 tablespoons of water. DO NOT cover because it will cause the broccoli to turn a dull green.
Begin to make your sauce… whisk in the soy sauce, vinegar, honey, ginger, garlic, cornstarch, olive oil, and sesame oil in a bowl.
Then add this yummy goodness to the pan of chicken and broccoli. You will begin to see the sauce thicken, this is due to the cornstarch. It’s used as your thickening agent.
Cook for 3 to 5 minutes after you add the sauce. The broccoli will still have a nice snap to it, you don’t want to over cook it.
Note: If you have small children, I recommend cooking their portion of broccoli separately so that it is tender.
Serve with brown rice (as I did) or quinoa to keep it healthy. If not, enjoy it with jasmine rice or over noodles. Enjoy!!
