Dark, meaty, smokey and delicious. Chili is one of my favorite dishes to make because it’s filling and packed with so much flavor and vegetables. This turkey vegetable chili is healthier just by using a leaner protein such as turkey. Toss in your garden favorites such as mushrooms, zucchini and even sweet potato for a sweeter flavor. If you’re looking for an easy, interactive and tasty Super Bowl recipe, this is sure to please the pickiest eater, even those friends that don’t want to sacrifice their New Years resolution. Top it off with your traditional toppings such as sour cream, cheese and chives or go a healthier route and finish it off with avocado, cilantro and fresh tomatoes. Warm up your Wednesday night with a big pot of chili.
Get all your ingredients ready. Mince the garlic and chop the carrots, green and red peppers and onions the same size so that they cook evenly.
In a large pot drizzle olive oil. Once the pot is hot, toss in the carrots and sauté for 2 minutes, followed by the peppers, onions and garlic. At this point feel free to toss in mushrooms as well to add an earthy flavor.
After it sautés on medium-high heat, toss in the chili seasoning and ground turkey and begin to breakdown the meat with a wooden spoon as it cooks. You don’t want any large turkey chunks. It’s important to cook it evenly.
Once the meat is minced, pour in the diced tomatoes along with the red and black beans. Add salt to taste. Cover and simmer for 15mins.
Add your favorite toppings, such as sour cream, cheese, scallions, avocado and cilantro. The possibilities are endless. Have fun and be creative! Serve with crackers, warm crusty bread or my all time favorite, corn bread. I love balancing a spicy chili (I add hot sauce to mine for a kick) with sweet buttery corn bread. Enjoy!
