I gained 75 lbs after my two pregnancies. I finally said “enough is enough” and started to make lifestyle changes to my diet and exercise routine. I ran my first 5K race six months post-partum and I haven’t stopped since. My transformation took more than a year; I dropped from a dress size XL to a small. I became a coach because I love helping others achieve their fitness and business goals. In June, I will be competing in my 2nd figure competition.
Quinoa (pronounced keen-wa) is a great carb to add to his diet. I’ve learned through my health and fitness journey that you don’t have to give up carbs, you just have to eat the right ones.
I love this easy and quick quinoa recipe! It’s served cold and it’s a perfect side dish or mini meal. Quinoa is a nutrient-rich super grain packed with protein and fiber. It is very versatile.
When I was introduced to quinoa I did not like it at all! It took experimentation and trying a few different recipes to find how I liked to eat it. This is one of my favorite ways. Hope you enjoy it!
